Chicken w/ Tomatoes, Lime and Cilantro


Now if somebody would come do my dishes…..

Serves 4 * Prep Time 30 minutes * Total Time 30 minutes

  • 1 TB olive oil
  • 4 boneless, skinless chicken breast halves
  • Coarse salt and freshly ground pepper
  • 1 onion, halved lengthwise and thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1 TB fresh lime juice
  • 1/4 cup packed fresh cilantro

1. In a large skillet, heat oil over medium-low. Season chicken on both sides w/ salt and pepper, and cook until lighly browned and just cooked through, turning once, 10-15 minutes. Transfer to a plate cover loosely w/ aluminum foil

2. Raise heat to medium;  cookonion, stirring occasionally, until softened, 5-7 minutes. Add tomatoes; cook until tomatoes soften and release their juice, 1-2 minutes. Remove from heat, and stir in lime juice and cilantro. Season with sald and pepper. Serve chicken topped w/ tomato mixture.

I served it with steamed green beans w/ lemon zest and sliced almonds.
